How to Temper Vanova Milk Chocolate

Hand Tempering:

Follow these recommended temperatures for perfect tempering:

  • Heating Temperature: 45°C
  • Working Temperature: 31°C

Use the seeding method with 30% unmelted chips to maintain stability and prevent over-crystallization.

Using a Continuous Tempering Machine:

  1. Melt the chocolate to 42°C and hold for an hour to fully decrystallize.
  2. Set the tempering temperature to 29.5°C and start the tempering process.
  3. If the chocolate thickens, adjust the temperature slightly to 30.2°C.
